Diwali weekend special: Rich carrot cake

Carrot cake is one of the oldest form of sweet dessert that is baked with a different whiff. It is a perfect dish for a party or a festival like Diwali. This recipe uses carrots walnuts and cream to deliver a moist rich and fine texture to the cake. It is easy and fun to make it. This cake goes great with tea coffee or even cold drinks.

Sugar nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp;1 frac12; cups Grinded and sieved

 

Eggs nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp;3

 

Carrots nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; 2 cups Grated and squeezed

 

Cream nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp;1 cup Thick

 

Baking powder nbsp; 1 frac12; tsp

 

Walnuts nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; nbsp; frac12; cup Chopped

 

Vanilla essence nbsp; 4 drops

 

Method:

 

nbsp;Mix sugar and cream well.

 

Put eggs in it one by one beating continuously.

 

Sieve maida and baking powder together and add to the above paste.

 

Beat the mixture in one direction only with a beater.

 

Add grated carrots and fold the mixture well.

 

Add vanilla essence and walnuts.

 

Mix all ingredients properly.

 

Preheat oven for 10 minutes.

 

Grease the baking dish and sprinkle little maida on it.

 

Pour the mixture in the dish.

 

Keep it in oven and bake for an hour.
