Mother’s recipe

Such was the magical appeal of Saint Teresa of Kolkata — who will for long be fondly called Mother Teresa — that unending will be stories and anecdotes drawing attention to her unique aura. Here is one more, perhaps little known. 

When taking an Air-India flight abroad, a gentleman approached her, said he was head of the airline’s catering service and asked if she had any preferences for her meals. He was sincerely thanked, but told she would eat any simple food served to fellow passengers. 

Hours later she summoned him, with a request: Could he tell her how to prepare a palatable meal from the outer leaves of a cauliflower? So many of them were thrown away in the "mandi" every day, surely there was a way of putting them to nutritious use? When the expert returned to his base he spent several days trying to work out a suitable recipe, then went to Calcutta (now Kolkata) to present his findings to the living saint: she thanked and blessed him, and adopted what he later described as his most elevated culinary endeavour.
